What we eat and how we eat hugely impacts the environment. The food system contributes to over 30% of global greenhouse gas emissions. Inefficiencies within the system are a significant source of waste: one third of food produced globally — approximately, 1.3 billion tons of food — is wasted every year. Join us as we explore how our individual and collective food choices can directly improve wellness and planetary health.

About the speaker: Elaine Chu wears many hats within Fraser Health: she is a Registered Dietitian, and the Regional Manager of Food Operations at Royal Columbian Hospital and Eagle Ridge Hospital, and Chairperson of Lower Mainland Sustainable Hospital Food Operations Committee. She is also a Green+Leader.
What is The Food Series?
The Food Series is developed and delivered by the Energy and Environmental Sustainability Team, founders and facilitators of the GreenCare network. The series will cover different themes, including the importance of providing nutritionally rich & culturally appropriate food in the healthcare settings, environmental sustainability and impacts of food waste on the environment, and how we can make positive social impacts in the food system. Our series will be informational and educational, with the hope that it will empower health-care staff to make sustainable food choices in their personal and professional lives.
Food, without a doubt, plays a huge part in all our lives, and also happens to be one of the most impactful when it comes to personal health and well-being, public health, as well as environmental health.
